Bali Hotels Association (BHA) announced the launch of the first BHA Sustainable Food Festival, running from September 27th until October 16th, 2021 in 30 participating member hotels.
This festival allows participating members to showcase the innovative work they have been putting in during these times to shift to a more sustainable way of operating. While programs such as single use plastic reduction are already well established, participating member hotels are preparing both a two-course lunch menu and and a three-course dinner menu.
To be featured, menus must adhere to the following key sustainability criteria:
- Ingredients used must be 100% sourced from Indonesia
- Encourage a minimum of 75% organically grown items
- Respect fair trade principles
- All seafood produces to be certified sustainable and poultry to be free range
As part of BHA active members Amadea is excited to join as one of the hotel participant of this festival at our street front Asparagus Resto & Bar. The kitchen team has prepares two and three course menu following the sustainable principle by the festival committee. Price starts from Rp 100,000 for a two course menu and available daily for dinner during the festival.
“It is truly rewarding experience for me to prepare such menus that follows certain guidelines. This sustainable practice reminds me back then into my childhood in my home village thirty years plus ago where all ingredients are taken from our own garden and produce so little waste. My team and I are proud to be part of this festival and love to see that Bali is moving into sustainable tourism”, says Chef Mudiarsa, the head of Asparagus kitchen team.
